- 13 cups day-old cooked rice
- 21 cup mixed vegetables (peas, corn, diced carrots)
- 31 red bell pepper, diced
- 43 green onions, sliced
- 53 cloves garlic, minced
- 61 inch ginger, grated
- 73 tbsp soy sauce
- 81 tbsp sesame oil
- 92 tbsp vegetable oil
- 101/2 tsp white pepper
- 111 cup firm tofu, crumbled (optional)

Heat vegetable oil in a wok over the highest heat possible.

If using tofu, add crumbled tofu first and stir-fry until lightly browned, 3 minutes. Remove.

Add garlic and ginger, stir 15 seconds.

Add mixed vegetables and bell pepper. Stir-fry 2 minutes.

Add day-old rice, breaking up any clumps. Press rice against the hot wok to get some char.

Add soy sauce and white pepper. Toss everything together for 2-3 minutes.

Return tofu, drizzle sesame oil, add green onions. Toss once more. Serve immediately.
