- 12 cups mushrooms, quartered
- 21 cup green peas
- 32 tbsp vegetable oil
- 41 tsp cumin seeds
- 51 medium onion, pureed
- 62 tomatoes, pureed
- 72 cloves garlic, minced
- 81 inch ginger, grated
- 91/2 tsp turmeric
- 101 tsp ground coriander
- 111/2 tsp chili powder
- 121 tsp garam masala

Heat oil in a pan. Add cumin seeds, let them splutter.

Add onion puree and cook until golden, about 6 minutes.

Add garlic and ginger, stir 1 minute. Add turmeric, coriander, and chili powder.

Add tomato puree. Cook 6-8 minutes until thick and oil separates.

Add mushrooms and peas. Stir to coat in masala.

Add 1/4 cup water, cover, and cook 8 minutes until mushrooms are tender.

Stir in garam masala and salt. Garnish with cilantro. Serve with roti or rice.
