- 11 cup long grain rice
- 21 can (15 oz) black beans, with liquid
- 31 medium onion, diced
- 41 green bell pepper, diced
- 54 cloves garlic, minced
- 62 tbsp olive oil
- 71 tsp cumin
- 81 tsp oregano
- 91 bay leaf
- 101 tbsp white vinegar
- 11Salt and pepper to taste

Heat olive oil in a pot. Sauté onion and bell pepper until soft, about 5 minutes.

Add garlic, cumin, and oregano. Stir 1 minute.

Add black beans with their liquid, bay leaf, and vinegar.

Add rice and enough water so total liquid is 2 cups. Stir once.

Bring to a boil, cover tightly, and reduce to lowest heat.

Cook for 20 minutes without lifting the lid.

Remove from heat, rest 5 minutes. Fluff with a fork. Discard bay leaf. Serve as a side or main — this is Cuban soul food.
