- 11 lb green beans, trimmed and snapped in half
- 21 large onion, diced
- 34 cloves garlic, sliced
- 43 medium tomatoes, diced
- 51/4 cup olive oil
- 61 tbsp tomato paste
- 71/2 cup water
- 8Salt and pepper to taste
- 9Lemon wedges for serving

Heat olive oil in a pot. Sauté onion until soft and translucent, about 5 minutes.

Add garlic, cook 1 minute.

Add green beans and toss to coat in oil. Cook 3 minutes.

Add diced tomatoes and tomato paste. Stir well.

Add water. Bring to a simmer, cover, and cook on low for 25-30 minutes until beans are very tender (not crisp-tender — they should be soft, Lebanese style).

Season with salt and pepper.

Serve warm or at room temperature with lemon wedges and pita bread. This is classic Lebanese mezza.
