    Heat oil in a pot. Sauté onion until golden, about 5 minutes.

    Add garlic and ginger, cook 1 minute. Add diced tomatoes and tomato paste, cook 5 minutes.

    Add peanut butter and stir until it melts into the tomato base.

    Gradually add vegetable broth while stirring to prevent lumps.

    Add sweet potato cubes and whole scotch bonnet. Bring to a boil.
