- 11 cup natural peanut butter (smooth)
- 21 large onion, diced
- 33 medium tomatoes, diced
- 42 tbsp tomato paste
- 51 large sweet potato, cubed
- 62 cups chopped kale or spinach
- 74 cups vegetable broth
- 81 scotch bonnet pepper
- 93 cloves garlic, minced
- 101 inch ginger, grated
- 111 tbsp vegetable oil
- 12Salt to taste
- 13Rice or fufu for serving
Instructions

Heat oil in a pot. Sauté onion until golden, about 5 minutes.

Add garlic and ginger, cook 1 minute. Add diced tomatoes and tomato paste, cook 5 minutes.

Add peanut butter and stir until it melts into the tomato base.

Gradually add vegetable broth while stirring to prevent lumps.

Add sweet potato cubes and whole scotch bonnet. Bring to a boil.

Reduce heat and simmer 20 minutes until sweet potatoes are tender.

Add chopped kale, cook 5 minutes until wilted. Season with salt. Serve over rice or with fufu — the peanut broth is incredibly rich and warming.
