- 12 cans (15 oz) fava beans, drained
- 23 tbsp olive oil
- 33 cloves garlic, minced
- 41 tsp cumin
- 52 tbsp lemon juice
- 61/2 tsp chili flakes
- 7Salt to taste
- 8Fresh parsley
- 9Diced tomato and onion for topping
- 10Hard-boiled eggs (optional)
- 11Pita bread for serving
Instructions
- 1
Place drained fava beans in a pot with 1/2 cup water. Heat on medium, mashing some beans with a fork for texture.
- 2
In a small pan, heat olive oil. Sauté garlic for 30 seconds until fragrant.
- 3
Add cumin and chili flakes to the garlic oil, stir 15 seconds. Pour over the beans.
- 4
Add lemon juice and salt. Stir well and simmer 5 minutes until thick and creamy.
- 5
The consistency should be like a thick porridge — add water if too thick.
- 6
Ladle into bowls. Top with diced tomato, onion, parsley, and a drizzle of olive oil.
- 7
Serve with warm pita bread. This is Egypt's national breakfast — millions eat it every morning.
