- 11 lb okra, washed, dried, and cut into 1-inch pieces
- 22 tbsp vegetable oil
- 31 tsp cumin seeds
- 41 medium onion, sliced
- 52 cloves garlic, minced
- 61 medium tomato, diced
- 71 tsp ground coriander
- 81/2 tsp turmeric
- 91/2 tsp chili powder
- 101 tsp amchur (dry mango powder) or lemon juice
- 11Salt to taste

Make sure okra is completely dry before cutting — moisture makes it slimy.

Heat oil in a wide pan over medium-high heat. Add cumin seeds, let splutter.

Add okra pieces. Spread in a single layer and don't stir for 3-4 minutes. This helps them crisp up.

Stir gently and cook another 5 minutes until okra is lightly browned and not slimy.

Add sliced onion. Cook 3 minutes. Add garlic, coriander, turmeric, and chili powder.

Add diced tomato. Cook 3-4 minutes until tomato softens.

Add amchur powder and salt. Toss gently. Garnish with cilantro and serve with roti.
