- 14 medium potatoes, boiled and mashed
- 21/4 cup green peas, boiled and mashed
- 32 green chilies, minced
- 41 inch ginger, grated
- 52 tbsp fresh cilantro, chopped
- 61 tsp cumin powder
- 71 tsp chaat masala
- 81/2 tsp garam masala
- 92 tbsp cornstarch
- 10Oil for shallow frying
- 11Salt to taste
- 12Tamarind chutney and green chutney for serving

Combine mashed potatoes, peas, green chilies, ginger, cilantro, cumin, chaat masala, garam masala, cornstarch, and salt.

Mix well and divide into 8-10 portions. Shape each into a flat round patty about 3 inches wide.

Heat oil in a flat pan (enough to shallow fry). Place patties in the oil.

Cook on medium heat for 3-4 minutes per side until deep golden and crispy crust forms.

Don't flip too early — let the crust set first or they'll break apart.

Drain on paper towels.
