- 12 cups plain Greek yogurt (2%)
- 21 scoop chocolate protein powder
- 33 tablespoons cocoa powder
- 43 tablespoons maple syrup or honey
- 51 teaspoon vanilla extract
- 6Pinch of salt
- 71 cup heavy cream, whipped to soft peaks
- 8Dark chocolate shavings and raspberries for topping
Instructions
- 1
Mix Greek yogurt, protein powder, cocoa powder, maple syrup, vanilla, and salt until completely smooth with no lumps. Taste and adjust sweetness — the mixture should be intensely chocolatey.
- 2
In a separate bowl, whip heavy cream to soft peaks — when you lift the whisk, the peaks should gently fold over. Don't overwhip.
- 3
Fold the whipped cream into the chocolate yogurt mixture in two additions, using a rubber spatula with a gentle fold-and-turn motion. This is called folding, not stirring — it preserves the air in the whipped cream that creates the mousse-like texture. Some white streaks are okay on the first fold.

Divide into 4 glasses or ramekins. Refrigerate at least 1 hour before serving. Top with dark chocolate shavings and fresh raspberries.
