- 23 tablespoons olive oil
- 33 tablespoons lemon juice
- 44 cloves garlic, minced
- 52 teaspoons dried oregano

Make tzatziki: mix all ingredients together. Squeezing the cucumber very dry is essential — skip this and the tzatziki will be watery. Refrigerate at least 30 minutes for flavors to meld.

Mix olive oil, lemon juice, garlic, oregano, cumin, smoked paprika, salt, and pepper. Coat chicken thoroughly and marinate 30 minutes.

Cook chicken in a very hot grill pan or cast-iron skillet 5–6 minutes per side until charred and caramelized at the edges and internal temp reads 165°F. Let rest 5 minutes, then slice very thin.

Warm pita. Stack sliced chicken generously in the center, drizzle with tzatziki, and add tomato, red onion, and crumbled feta. Roll tightly. The gyro should overflow with filling — that's correct.
