- 11.5 lbs 80/20 ground beef
- 21 small onion, diced
- 33 cloves garlic, minced
- 42 teaspoons chili powder
- 51.5 teaspoons cumin
- 61 teaspoon smoked paprika
- 7½ teaspoon oregano
- 8¼ teaspoon cayenne
- 9⅔ cup water
- 10Salt and pepper to taste
- 118 corn or flour tortillas
- 12Toppings: shredded cheese, sour cream, lettuce, tomato, hot sauce

Heat a large skillet over medium-high heat. Add ground beef and cook, breaking into crumbles. Cook 6–8 minutes until fully browned — let it sit undisturbed for 1–2 minutes between stirring to develop crispy bits. Drain excess grease but leave a small amount for flavor.

Add onion and cook 3 minutes. Add garlic and all spices. Stir and cook 2 minutes until the spices are toasted and very fragrant.

Add water, stir to combine, and simmer 3–5 minutes until most of the liquid absorbs into the meat, leaving it moist and saucy but not watery. Season with salt and pepper.

Warm tortillas. Fill generously with the taco meat and load up with your favorite toppings. The key to excellent weeknight tacos is well-seasoned, slightly crispy beef — the spices and the little crunchy bits are what set homemade tacos apart.
