- 11 cup rolled oats
- 2½ cup natural peanut butter
- 3¼ cup dark chocolate chips (dairy-free)
- 43 tablespoons honey or maple syrup
- 52 tablespoons chia seeds
- 62 tablespoons ground flaxseed
- 71 teaspoon vanilla extract

- 9Cocoa powder or shredded coconut for rolling

Mix all ingredients together in a large bowl. Start with peanut butter and honey/maple syrup, then add oats, chia seeds, flaxseed, vanilla, and salt. Fold in chocolate chips last.

The mixture should be sticky enough to hold its shape when squeezed. If too dry, add more peanut butter. If too wet, add more oats one tablespoon at a time.

Refrigerate the mixture for 30 minutes — chilling makes it much easier to roll into balls. The cold firms up the peanut butter and makes the mixture cohesive.

Roll into 18 balls about 1 inch in diameter. Roll each ball in cocoa powder or shredded coconut if desired. Store in an airtight container in the refrigerator for up to 1 week or freeze for 3 months. These make excellent pre-workout snacks or healthy desserts.
