- 22 cups shredded rotisserie chicken
- 31 cup shredded cabbage
- 41 cup shredded carrots
- 53 green onions, sliced
- 6¼ cup natural peanut butter
- 73 tablespoons soy sauce
- 82 tablespoons rice vinegar
- 91 tablespoon sesame oil
- 101 tablespoon honey
- 112 tablespoons sriracha
- 122 cloves garlic, minced
- 131 teaspoon ginger, grated
- 14Crushed peanuts and cilantro for topping

Cook noodles according to package directions. Reserve ¼ cup noodle water. Drain and rinse with cold water.

Whisk peanut butter, soy sauce, rice vinegar, sesame oil, honey, sriracha, garlic, and ginger. Thin with the reserved noodle water until the sauce pours smoothly.

Toss noodles, shredded chicken, cabbage, and carrots with the peanut sauce in a large bowl. Start with ¾ of the sauce and add more to taste — everyone has different preferences for sauce-to-noodle ratio.

Serve topped with green onions, crushed peanuts, and fresh cilantro. This dish is excellent hot, room temperature, or cold from the fridge the next day — the flavors deepen beautifully overnight.
