- 32 tablespoons soy sauce

- 52 cloves garlic, minced
- 61 teaspoon fresh ginger, grated

Pat salmon cubes completely dry — moisture prevents caramelization. Mix honey, soy sauce, sesame oil, garlic, ginger, and red pepper flakes.

Heat vegetable oil in a large non-stick skillet over high heat until nearly smoking. Add salmon cubes in a single layer without touching. Sear undisturbed 2 minutes until a golden crust forms. Gently flip and sear another 1–2 minutes. Salmon should still be slightly pink in the center.

Pour the honey soy glaze over the salmon and toss gently to coat. Cook 1 minute, swirling the pan, as the glaze bubbles and caramelizes around the salmon bites. The sugars will create a sticky, lacquered coating.
