- 14 thick-cut boneless pork chops (about 1 inch thick)
- 21 cup pineapple juice
- 33 tablespoons soy sauce
- 42 tablespoons honey
- 51 tablespoon rice vinegar
- 63 cloves garlic, minced
- 71 teaspoon fresh ginger, grated
- 81 teaspoon cornstarch
- 91 tablespoon vegetable oil
- 10Pineapple rings for serving
- 11Sesame seeds and green onions for garnish
Instructions
- 1
Combine pineapple juice, soy sauce, honey, rice vinegar, garlic, ginger, and cornstarch in a small saucepan over medium heat. Whisk and simmer 4–5 minutes until thickened into a glossy glaze.
- 2
Pat pork chops dry and season with salt and pepper. Heat vegetable oil in a cast-iron skillet over high heat until smoking.
- 3
Sear pork chops 3–4 minutes per side until deep golden brown. Reduce heat to medium and brush generously with teriyaki glaze. Continue cooking, flipping and brushing every 30 seconds for 2–3 more minutes, until the glaze caramelizes and the internal temp reaches 145°F. Rest 3 minutes.
- 4
Grill or pan-sear pineapple rings 1–2 minutes per side until caramelized. Serve pork chops with grilled pineapple, sesame seeds, and green onions. The pineapple enzymes in the juice act as a natural tenderizer.
