- 12 lbs chicken breast
- 22 large heads romaine lettuce, chopped
- 3½ cup grated Parmesan
- 41 cup croutons
- 5For dressing: 3 tablespoons mayonnaise, 2 tablespoons lemon juice, 1 tablespoon Dijon, 2 cloves garlic minced, 2 teaspoons Worcestershire, ½ cup olive oil, ¼ cup Parmesan, salt and pepper
- 61 tablespoon olive oil
- 71 teaspoon garlic powder
- 8Salt and black pepper to taste
Instructions
- 1
Season chicken with garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken 6–7 minutes per side until golden and internal temp reads 165°F. Rest 5 minutes, then slice thinly against the grain.
- 2
Make Caesar dressing: whisk mayonnaise, lemon juice, Dijon, garlic, and Worcestershire together. Slowly drizzle in olive oil while whisking to emulsify. Stir in Parmesan, salt, and pepper. Taste — it should be rich, tangy, and garlicky.
- 3
For meal prep: layer romaine in containers with sliced chicken on top. Store croutons and dressing separately to keep everything crisp.

When ready to eat, toss lettuce and chicken with dressing, add croutons, and finish with shredded Parmesan. Properly stored (undressed), this meal prep keeps for 4 days.
