- 11.5 lbs Italian sausage links (mild or hot)
- 23 bell peppers (mixed colors), sliced
- 31 large onion, sliced
- 44 cloves garlic, minced
- 51 can (14.5 oz) diced tomatoes
- 61 teaspoon Italian seasoning
- 7½ teaspoon red pepper flakes
- 82 tablespoons olive oil

- 10Crusty rolls or hoagie buns for serving

Heat olive oil in a large cast-iron skillet over medium-high heat. Add sausage links and brown on all sides, turning every 2 minutes, for about 8–10 minutes total. Remove and slice into 1-inch rounds — they don't need to be cooked through yet.

In the same skillet, add bell peppers and onion. Cook 5–6 minutes until softened and starting to caramelize. Add garlic, Italian seasoning, and red pepper flakes, cooking 1 minute.

Return sliced sausage to the pan. Add diced tomatoes with their juices and stir to combine. Simmer over medium heat for 10–12 minutes until the sauce thickens, the sausages are fully cooked, and the peppers are tender but still have some bite.

Season with salt and pepper. Serve piled into hoagie rolls or over pasta, rice, or polenta. The pan drippings mixed with tomato create an incredibly flavorful sauce.
