- 12 ahi tuna steaks (6 oz each, 1-inch thick)
- 2¼ cup sesame seeds (mix of black and white)
- 32 tablespoons soy sauce
- 41 tablespoon sesame oil
- 51 tablespoon rice vinegar
- 61 teaspoon sriracha
- 71 teaspoon honey
- 81 tablespoon vegetable oil
- 9Salt and black pepper to taste
- 10Sliced avocado and mixed greens for serving
Instructions
- 1
Mix soy sauce, sesame oil, rice vinegar, sriracha, and honey in a small bowl to make the dipping sauce. Set aside.
- 2
Season tuna steaks lightly with salt and pepper. Pour sesame seeds onto a plate and firmly press the tuna into the seeds on all sides to form a thick sesame crust.
- 3
Heat vegetable oil in a cast-iron skillet over high heat until smoking. Sear tuna steaks 90 seconds per side — the outside should be golden with a thick sesame crust and the center should remain raw and bright red (sushi-grade rare). If you prefer medium, cook 2–2.5 minutes per side.
- 4
Slice the tuna against the grain into ½-inch thick slices. Fan out over mixed greens with sliced avocado. Drizzle with the sesame dipping sauce.
