- 11.5 lbs lean ground turkey
- 2½ cup crumbled feta cheese
- 3¼ cup red onion, finely minced
- 42 tablespoons fresh parsley, minced
- 52 cloves garlic, minced
- 61 teaspoon dried oregano
- 7½ teaspoon cumin
- 8Salt and black pepper to taste

- 104 brioche buns
- 11Tzatziki, tomato, cucumber, red onion for topping

Combine ground turkey, feta, red onion, parsley, garlic, oregano, cumin, salt, and pepper in a bowl. Mix gently until just combined — overworking the meat makes dense, tough burgers. Divide into 4 equal portions and form into patties about ¾-inch thick. Press a slight indentation in the center of each patty to prevent puffing up during cooking.

Heat olive oil in a skillet or grill pan over medium-high heat. Add patties and cook 5–6 minutes per side until the outside is deeply browned and the internal temperature reaches 165°F. Do not press down on the burgers — this squeezes out all the juices.

Toast the brioche buns in the same pan for 1 minute until golden and slightly crispy. Serve burgers on toasted buns with generous dollops of tzatziki, sliced tomato, cucumber, and red onion.
