    Combine vinegar, lemon juice, soy sauce, garlic, ginger, lemongrass, turmeric, salt, and pepper. Score chicken pieces deeply. Marinate for at least 1 hour (overnight is better).

    Grill chicken over medium-high heat. Baste frequently with annatto oil mixed with a little of the marinade while grilling. Cook for 12–15 minutes per side until cooked through (165°F) and the outside is deeply charred and fragrant.

    The skin should be crispy and bright orange from the annatto oil. The inside should be incredibly juicy from the acidic marinade. Serve with steamed rice, vinegar dipping sauce, and garlic butter to drizzle.
