- 21/2 cup feta cheese, crumbled
- 32 eggs
- 41/2 cup all-purpose flour
- 52 green onions, sliced
- 61/4 cup fresh dill, chopped
- 71/4 cup fresh mint, chopped

- 101 cup Greek yogurt, 1 grated cucumber, 2 tbsp dill, 1 clove garlic (for tzatziki)

Grate zucchini, salt generously, and squeeze out all moisture with a clean kitchen towel — do this twice. Excess moisture is the enemy of crispy fritters.

Combine dry zucchini, feta, eggs, flour, green onions, dill, and mint. Mix well. Season with pepper. The batter should be cohesive enough to form into patties. Make tzatziki by mixing all tzatziki ingredients and seasoning with salt.

Heat 3 tablespoons olive oil in a skillet over medium-high heat. Drop tablespoons of batter and flatten gently. Cook 3–4 minutes per side until deeply golden and crispy. Drain briefly. Serve hot with cold tzatziki.
