- 114 oz paneer, cubed and pan-fried
- 21 lb fresh spinach, blanched and puréed
- 33 tablespoons ghee
- 41 large onion, finely diced
- 54 cloves garlic, minced
- 61.5-inch ginger, grated
- 72 green chiles
- 81 teaspoon garam masala
- 91 teaspoon cumin
- 101/2 teaspoon turmeric
- 111/3 cup heavy cream
- 121/4 teaspoon kasuri methi

Pan-fry paneer cubes in 1 tablespoon ghee until golden on two sides. Set aside. In remaining ghee, cook onion 8 minutes. Add garlic, ginger, and green chiles, cook 2 minutes. Add cumin, turmeric, and garam masala. Stir 1 minute.

Add spinach purée and stir well. Add 1/4 cup water and simmer 8 minutes until the spinach is cooked through and the flavors have melded.

Stir in cream and crush kasuri methi between your palms into the sauce. Add paneer and fold gently. Simmer 4 minutes. Season with salt. Serve with naan or rice.
