- 14 bone-in skin-on chicken thighs
- 21/2 cup well-stirred tahini
- 31/4 cup fresh lemon juice
- 43 cloves garlic, minced
- 51/2 teaspoon cumin
- 61/4 teaspoon turmeric
- 71/2 cup water
- 82 tablespoons olive oil
- 9Salt and black pepper
- 10Pine nuts, parsley, and paprika for garnish

Whisk tahini, lemon juice, garlic, cumin, turmeric, water, and salt until smooth and pourable. Season chicken with salt and pepper.

Heat olive oil in an oven-safe skillet over high heat. Sear chicken skin-side down for 4–5 minutes until the skin is golden and crispy. Flip and cook 2 more minutes.

Pour tahini sauce over and around the chicken (not over the skin directly). Transfer to a 400°F oven and roast for 20–22 minutes until the chicken is cooked through (165°F) and the sauce is set. The sauce will thicken in the oven and turn a lovely golden color. Garnish with pine nuts, paprika, and parsley.
