- 11.5 lbs large prawns, peeled and deveined
- 23 tablespoons oil
- 31 large onion, finely diced
- 44 cloves garlic, minced
- 51-inch ginger, grated
- 62 medium tomatoes, diced
- 71 teaspoon Kashmiri chili powder
- 81 teaspoon coriander powder
- 91 teaspoon cumin
- 101/2 teaspoon turmeric
- 111/2 teaspoon garam masala
- 12Fresh cilantro and lemon juice
- 13Salt to taste

Heat oil over high heat. Toss prawns with half the turmeric and salt. Sear prawns for 1–2 minutes per side until just pink. Remove and set aside — they will finish cooking in the sauce.

In the same pan, cook onion for 8 minutes until golden. Add garlic, ginger, chili powder, coriander, cumin, and remaining turmeric. Stir 2 minutes. Add tomatoes and cook 6–8 minutes until a thick masala forms.

Return prawns to the masala. Toss well and cook 2–3 more minutes. Stir in garam masala, cilantro, and lemon juice. Season with salt. Serve with rice or naan.
