- 114 oz paneer, crumbled
- 22 tablespoons ghee or oil
- 31 teaspoon cumin seeds
- 41 large onion, finely diced
- 52 green chiles, finely chopped
- 64 cloves garlic, minced
- 71-inch ginger, grated
- 82 medium tomatoes, diced
- 91 teaspoon garam masala
- 101/2 teaspoon turmeric
- 111/2 teaspoon cumin powder
- 12Salt to taste
- 13Fresh cilantro and lemon juice for serving

Heat ghee over medium-high heat. Add cumin seeds and sizzle 30 seconds. Add onion and cook 6 minutes until golden. Add garlic, ginger, and green chiles. Cook 2 minutes. Add tomatoes and cook 5 minutes until softened and thick.

Add turmeric, cumin, and garam masala. Stir 1 minute. Add crumbled paneer and stir gently to coat in the masala. Cook 4–5 minutes, folding gently, until the paneer is heated through and the flavors meld.

Season with salt and a squeeze of lemon juice. Garnish with fresh cilantro. Serve with buttered toast or hot roti for a quick breakfast or light meal.
