- 11.5 lbs large shrimp, peeled and deveined
- 21 cup walnut halves
- 31/2 cup sugar
- 41/2 cup water (for candied walnuts)
- 51/2 cup cornstarch
- 61 egg white
- 71/2 cup mayonnaise
- 83 tablespoons condensed milk
- 92 tablespoons honey
- 101 tablespoon fresh lemon juice
- 11Neutral oil for frying
- 12Steamed broccoli and rice for serving

Make candied walnuts: dissolve sugar in water in a saucepan over medium heat. Add walnuts and cook 3–4 minutes until caramelized. Spread on parchment paper and separate with a fork. Let cool until hardened.

Whisk egg white until frothy. Coat shrimp in the egg white, then dredge in cornstarch, shaking off excess. Heat 2 inches of oil to 375°F. Fry shrimp in batches for 2–3 minutes until golden and crispy. Drain.

Whisk mayonnaise, condensed milk, honey, and lemon juice in a large bowl until smooth. Toss hot shrimp in the sauce to coat. Arrange on a platter, top with candied walnuts, and serve with steamed broccoli and rice.
