    Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Cook onion and carrots for 8 minutes. Add garlic, tomato paste, oregano, and paprika. Cook 2 minutes.

    Add crushed tomatoes, sugar, salt, and pepper. Stir in beans and half the fresh herbs. Bring to a simmer. The beans should be generously coated in sauce.

    Transfer to the oven at 375°F. Bake uncovered for 40–45 minutes until the sauce is thick and caramelized on top and the beans have absorbed the tomato flavors. Add a splash of water if it gets too dry. Garnish with remaining fresh herbs. Serve with crusty bread and crumbled feta.
