- 11 lb phyllo dough, thawed
- 21 cup (2 sticks) unsalted butter, melted
- 31 lb ground beef or lamb
- 41 large onion, finely diced
- 52 cloves garlic, minced
- 61/4 cup fresh parsley, chopped
- 71 teaspoon cumin
- 81/2 teaspoon allspice
- 91/2 teaspoon black pepper
- 10Salt
- 111 egg yolk + 1 tablespoon milk for glazing
- 12Sesame seeds for topping

Cook ground meat with onion in a skillet over medium-high heat for 8 minutes. Add garlic, cumin, allspice, parsley, salt, and pepper. Cook 2 more minutes. Cool completely.

Butter a 9x13 baking pan. Layer 6 sheets of phyllo, each well buttered. Spread meat filling evenly. Layer 6 more buttered phyllo sheets on top.

Score the top layers into rectangles or diamonds with a sharp knife. Brush with egg-milk glaze. Sprinkle sesame seeds over top. Bake at 375°F for 35–40 minutes until deeply golden and crispy. Rest 10 minutes before cutting.
