- 14 flounder fillets (about 6 oz each)
- 21/2 cup all-purpose flour
- 3Salt and black pepper
- 44 tablespoons unsalted butter, divided
- 52 tablespoons olive oil
- 64 cloves garlic, minced
- 71/3 cup dry white wine
- 81/4 cup fresh lemon juice
- 93 tablespoons capers, drained
- 101/4 cup fresh parsley, chopped

Pat flounder dry. Season with salt and pepper. Dredge lightly in flour, shaking off excess. Heat 2 tablespoons butter and oil in a large skillet over medium-high heat until butter foam subsides.

Cook flounder in batches for 2 minutes per side until golden — flounder is thin and cooks very quickly. Remove to a plate and cover loosely.

In the same pan, add remaining butter. Add garlic and cook 1 minute. Add wine and cook 2 minutes. Add lemon juice and capers. Simmer 1 minute until the sauce is slightly reduced and glossy. Return flounder to the pan, spoon sauce over it, and scatter parsley. Serve immediately.
