- 11.5 lbs large shrimp, peeled and deveined
- 22 tablespoons neutral oil
- 36 cloves garlic, minced
- 44 Thai bird's eye chiles, thinly sliced
- 51 red bell pepper, thinly sliced
- 62 tablespoons oyster sauce
- 71 tablespoon soy sauce
- 81 tablespoon fish sauce
- 91 teaspoon sugar
- 101 cup fresh Thai basil leaves
- 11Steamed jasmine rice and fried egg for serving

Combine oyster sauce, soy sauce, fish sauce, and sugar in a small bowl. Set aside.

Heat oil in a wok over very high heat until smoking. Add garlic and chiles. Stir-fry for 30 seconds — work fast. Add bell pepper and stir-fry 1 minute.

Add shrimp and stir-fry for 2 minutes until pink. Pour in sauce and toss to coat. Cook 30 more seconds. Remove from heat and fold in fresh Thai basil leaves — they'll wilt from the heat. Serve immediately over jasmine rice topped with a fried egg.
