- 11.5 lbs large shrimp, peeled and deveined
- 25 tablespoons olive oil
- 38 cloves garlic, thinly sliced
- 41/4 cup fresh lemon juice
- 5Zest of 1 lemon
- 61/4 cup fresh parsley, chopped
- 71/4 teaspoon red chili flakes
- 8Salt and black pepper
- 9Pita and hummus for serving

Pat shrimp dry. Season with salt, pepper, and chili flakes. Heat 2 tablespoons olive oil in a large skillet over high heat. Add shrimp in a single layer and cook 90 seconds per side until pink. Remove.

Reduce heat to medium. Add remaining olive oil. Add sliced garlic and cook 2–3 minutes, stirring, until lightly golden. Do not burn the garlic.

Add lemon juice and zest. Let it sizzle for 30 seconds. Return shrimp to the pan, toss to coat in the lemon-garlic oil, and cook 30 more seconds. Remove from heat. Add parsley. Serve immediately with warm pita and hummus.
