- 14 bone-in, skin-on chicken thighs
- 23 tablespoons za'atar spice blend
- 33 tablespoons olive oil
- 44 cloves garlic, minced
- 5Juice of 1 lemon
- 61 teaspoon sumac
- 7Salt and black pepper
- 81 pint cherry tomatoes
- 91 medium red onion, sliced
- 10Fresh flat-leaf parsley for serving

Combine za'atar, olive oil, garlic, lemon juice, sumac, salt, and pepper. Loosen the skin of each chicken thigh and rub some of the za'atar mixture directly onto the meat. Coat the outside of the skin well. Marinate 30 minutes at room temperature.

Scatter cherry tomatoes and red onion on a rimmed baking sheet. Place chicken thighs skin-side up on top of the vegetables. Roast at 425°F for 35–40 minutes until the skin is deep golden and crispy and the internal temperature reaches 165°F.

Let rest 5 minutes. Serve over a bed of the roasted tomatoes and onions with fresh parsley. The tomatoes will have burst and mingled with the za'atar pan juices to create a natural sauce.
