- 11.5 lbs large prawns, peeled and deveined
- 22 tablespoons olive oil
- 31 small yellow onion, finely diced
- 43 cloves garlic, minced
- 51/2 cup dry white wine
- 61 can (14 oz) diced tomatoes
- 71/2 teaspoon dried oregano
- 81/4 teaspoon red chili flakes
- 94 oz feta cheese, crumbled
- 10Salt and black pepper
- 11Fresh parsley and crusty bread for serving

Heat olive oil in an oven-safe skillet over medium heat. Cook onion for 5 minutes until soft. Add garlic, chili flakes, and oregano. Cook 1 minute. Pour in wine and cook 2 minutes. Add diced tomatoes and simmer 8 minutes until the sauce thickens.

Season prawns with salt and pepper. Nestle them into the tomato sauce in a single layer. Scatter feta generously over the top.

Preheat broiler to high. Transfer the skillet to the broiler (or continue on stovetop covered for 4 minutes). Broil for 4–6 minutes until the prawns are pink, cooked through, and the feta is golden. Garnish with fresh parsley. Serve directly from the skillet with crusty bread.
