- 11 lb sushi-grade yellowfin tuna, very finely diced
- 22 tablespoons soy sauce
- 31 tablespoon sesame oil
- 41 tablespoon sriracha
- 51 tablespoon mayonnaise
- 61 teaspoon fresh ginger, grated
- 71 avocado, diced
- 82 tablespoons fresh chives, minced
- 91 tablespoon sesame seeds
- 10Wonton chips or cucumber slices for serving

Combine soy sauce, sesame oil, sriracha, mayonnaise, and grated ginger in a bowl. Add diced tuna and gently fold to coat. Be careful not to over-mix or mash — you want clean, separate pieces of fish.

Gently fold in diced avocado, reserving some for garnish. Taste and adjust with more sriracha for heat or soy for salt.

Using a ring mold or spoon, plate the tartare in a compact mound. Garnish with reserved avocado, chives, and sesame seeds. Serve immediately with crispy wonton chips or cucumber slices for scooping. The tartare must be served cold.
