- 116 falafel balls (from recipe-701 or store-bought)
- 24 large pita or flatbreads
- 31 cup hummus
- 42 cups shredded romaine lettuce
- 52 Roma tomatoes, diced
- 61 cucumber, diced
- 71/4 cup pickled turnips or cucumbers
- 81/4 cup tahini sauce
- 9Hot sauce to taste
- 10Fresh parsley leaves

Warm pita breads in a dry skillet over medium heat for 1 minute per side or wrap in foil and warm in a 350°F oven for 5 minutes.

Spread 3 tablespoons of hummus down the center of each warm pita. Place 4 falafel balls on the hummus and gently press to flatten them slightly.

Top with lettuce, tomatoes, cucumber, and pickled turnips. Drizzle tahini sauce and hot sauce generously over the filling. Scatter fresh parsley. Wrap tightly in parchment paper and serve immediately.
