- 124 store-bought papdi (crispy fried dough wafers)
- 21 cup canned chickpeas, drained and rinsed
- 31 medium boiled potato, diced
- 41 cup plain yogurt, whisked smooth
- 53 tablespoons tamarind chutney
- 62 tablespoons green mint chutney
- 71/2 teaspoon chaat masala
- 81/4 teaspoon cumin powder
- 91/4 teaspoon red chili powder
- 101/4 cup sev (crunchy chickpea noodles)
- 11Fresh cilantro

Arrange papdi in a single layer on a large platter. Place a few chickpeas and a small piece of potato on each papdi.

Spoon 1 teaspoon of yogurt over each papdi. Drizzle tamarind chutney and green chutney over the top.

Dust with chaat masala, cumin powder, and red chili powder. Top with sev and fresh cilantro. Serve immediately — the papdi will soften within minutes of being topped, so assemble and eat right away.
