Combine milk and hot sauce in a shallow dish. Add catfish fillets and let soak for 15 minutes — this draws out any muddy flavor and keeps the fish moist during frying.

Combine cornmeal, flour, garlic powder, onion powder, paprika, Old Bay, cayenne, salt, and pepper in a shallow dish. Remove catfish from milk, letting excess drip off. Dredge each fillet in the cornmeal mixture, pressing firmly on all sides to coat well.

Heat 1.5 inches of oil in a cast-iron skillet to 375°F. Fry fillets for 3–4 minutes per side until deep golden brown with a crunchy crust. The fish should reach an internal temperature of 145°F. Do not crowd the pan. Drain on a paper towel-lined rack. Serve immediately with lemon wedges, coleslaw, and hot sauce.
