- 12 cups all-purpose flour
- 21 teaspoon active dry yeast
- 31 teaspoon sugar
- 43/4 cup warm water
- 51 teaspoon salt
- 62 tablespoons olive oil (for dough)
- 71/4 cup za'atar spice blend
- 83 tablespoons extra-virgin olive oil
- 91/4 cup sesame seeds, toasted
- 10Sea salt flakes for finishing

Dissolve yeast and sugar in warm water, rest 5 minutes until foamy. Combine flour and salt. Add yeast mixture and 2 tablespoons olive oil. Knead for 8 minutes until smooth and supple. Place in an oiled bowl, cover, and rise 1 hour until doubled.

Mix za'atar with 3 tablespoons olive oil to make a thick paste. Stir in toasted sesame seeds.

Divide dough into 6 balls. On a floured surface, roll each into a thin oval, about 8 inches long and 1/4 inch thick. Transfer to parchment-lined baking sheets. Spread 1.5 tablespoons of the za'atar oil paste evenly over each flatbread, pressing gently to adhere.

Bake at 450°F for 12–15 minutes until the edges are golden and crispy and the za'atar topping is fragrant. Sprinkle with sea salt flakes immediately after removing from the oven. Serve warm.
