Whisk tahini, lemon juice, garlic, cumin, and salt together in a bowl. The mixture will seize up and become thick and clumpy — this is normal and expected.

Add cold water one tablespoon at a time, whisking continuously. The sauce will gradually loosen and become smooth and creamy. Adjust water until you reach the desired consistency: thick and spreadable for a dip, thinner for drizzling.
