- 12 stale pita breads, torn into rough pieces
- 23 tablespoons olive oil, divided
- 31 large head romaine lettuce, roughly chopped
- 43 Roma tomatoes, diced
- 51 English cucumber, diced
- 61 cup radishes, thinly sliced
- 74 green onions, sliced
- 81/2 cup fresh mint leaves
- 91/2 cup fresh parsley leaves
- 103 tablespoons fresh lemon juice
- 111 tablespoon pomegranate molasses
- 121 teaspoon sumac
- 131/2 teaspoon dried mint

Toss pita pieces with 1.5 tablespoons olive oil on a baking sheet. Season with salt. Broil on high for 3–5 minutes, turning once, until deeply golden and crunchy. Watch carefully — they burn fast. Let cool until crisp.

Whisk together remaining 1.5 tablespoons olive oil, lemon juice, pomegranate molasses, sumac, dried mint, salt, and pepper in a large bowl to make the dressing.

Add romaine, tomatoes, cucumber, radishes, green onions, fresh mint, and parsley to the bowl. Toss with dressing. Add the crispy pita just before serving and toss gently. The pita should be lightly coated but still retain some crunch. Serve immediately.
