- 13 cups all-purpose flour, plus more for dusting
- 21 teaspoon active dry yeast
- 31 teaspoon sugar
- 43/4 cup warm water (110°F)
- 51/2 cup plain yogurt
- 62 tablespoons neutral oil
- 71 teaspoon salt
- 84 tablespoons unsalted butter, melted
- 96 cloves garlic, minced
- 102 tablespoons fresh cilantro, finely chopped
- 111/2 teaspoon nigella seeds (optional)

Dissolve yeast and sugar in warm water. Let stand 5–8 minutes until frothy and bubbling — if no bubbles appear, your yeast is dead and needs replacing. Combine flour and salt in a large bowl. Make a well in the center and add yogurt, oil, and activated yeast mixture.

Mix until a shaggy dough forms, then knead on a floured surface for 8–10 minutes until smooth, soft, and slightly tacky. Place in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm spot for 1–1.5 hours until doubled in size.

Divide dough into 8 equal balls. On a lightly floured surface, roll each ball into an oval about 9 inches long and 1/4 inch thick. Mix minced garlic into melted butter.

Heat a cast-iron skillet over high heat until smoking hot. Place one naan in the dry skillet and cook for 1.5–2 minutes until large bubbles form and the bottom has dark char spots. Flip and cook 1–1.5 minutes more. Immediately brush hot surface with garlic butter and sprinkle with cilantro. Repeat with remaining naan, keeping finished pieces warm under a clean towel.
