- 12 cups masa (fresh or made from masa harina)
- 24 cups cold water
- 33 tablespoons cacao paste or 100% unsweetened cocoa powder
- 42 tablespoons sugar or to taste
- 51 teaspoon cinnamon
- 6Pinch of salt

Dissolve the masa in 2 cups cold water using your hands or a blender, working out any lumps, until the masa liquid is smooth.

In a separate container, dissolve cacao paste in ½ cup hot water until smooth. Add to the masa liquid along with remaining cold water.

Add sugar, cinnamon, and salt. Stir or blend vigorously until fully combined. Taste and adjust sweetness.

Serve over ice in tall glasses. This ancient Mayan fermented drink is nutritious, slightly thick, and has a distinctive earthy, chocolatey flavor unlike any commercial drink. It can be served fresh as here or fermented for 1–3 days for a sour, probiotic version.
