- 1½ lb scallops
- 2½ lb large shrimp, peeled
- 3½ lb crab meat or lobster pieces
- 43 tablespoons unsalted butter
- 53 shallots, finely minced
- 62 cloves garlic, minced
- 7½ cup dry white wine
- 81 cup heavy cream
- 91 tablespoon fresh tarragon
- 102 tablespoons fresh flat-leaf parsley
- 11½ cup Gruyère cheese, grated
- 123 tablespoons breadcrumbs

Preheat broiler to high. Sauté shallots and garlic in butter over medium heat for 3 minutes. Add wine and reduce by half. Add cream and simmer 5 minutes until slightly thickened.

Add scallops, shrimp, and crab to the cream sauce and cook over medium heat for 3 minutes until just barely cooked — they will finish under the broiler. Add tarragon and parsley. Season with salt and white pepper.

Divide the seafood and sauce evenly among 4 individual gratin dishes or scallop shells. Mix Gruyère with breadcrumbs and top each gratin generously.

Broil 4 inches from the heat for 4–5 minutes until the top is golden-brown and bubbling. Serve immediately with grilled bread for soaking up the cream sauce.
