- 22 cups shredded chicken
- 32 cups tomatillo salsa verde
- 41 cup Mexican crema
- 51 cup Gruyère or Swiss cheese, grated
- 6½ cup Oaxacan cheese, shredded
- 72 tablespoons vegetable oil
- 8½ cup white onion, finely diced
- 9Fresh cilantro for serving

Mix salsa verde with Mexican crema until combined. Heat oil in a small skillet and briefly dip each tortilla for 10 seconds per side until pliable.

Dip each tortilla in the salsa verde-crema mixture to coat. Fill with shredded chicken, roll tightly, and place seam-side down in a greased 9×13 baking dish.

Pour remaining salsa verde mixture over the rolled enchiladas. Top evenly with both grated cheeses.

Bake at 375°F for 20 minutes until the cheese is melted, bubbling, and golden-spotted. The 'suiza' (Swiss) name refers to the generous use of cream and melted cheese — these are richer than standard enchiladas. Serve topped with diced onion and cilantro.
