- 12 cups shredded cooked chicken
- 216 corn tortillas
- 31½ cups vegetable oil for frying
- 4½ cup Mexican crema
- 51 cup guacamole
- 61 cup salsa roja
- 72 cups shredded iceberg lettuce
- 8½ cup queso fresco, crumbled
- 9Pickled jalapeños for serving

Warm tortillas in a dry skillet for 30 seconds per side until pliable. Place 2 tablespoons of shredded chicken along the center of each tortilla and roll tightly into a thin cylinder. Secure with a toothpick.

Heat oil in a large skillet to 350°F. Working in batches of 4, fry the flautas seam-side down first for 2 minutes, then turn and fry 2 more minutes until golden and crispy all over. Drain on paper towels and remove toothpicks.

Arrange flautas on a platter lined with shredded lettuce. Drizzle crema and salsa over the top. Add dollops of guacamole, crumble queso fresco over everything, and serve with pickled jalapeños on the side.
