- 1½ cup (1 stick) unsalted butter, room temperature
- 2½ cup powdered sugar, sifted
- 33 large egg whites, room temperature
- 41 teaspoon vanilla extract
- 5¾ cup all-purpose flour, sifted

Preheat oven to 400°F. Beat butter with powdered sugar until very light and fluffy, about 3 minutes. Beat in vanilla.

Gradually fold in egg whites alternating with flour until the batter is smooth and just combined. It should be the consistency of thick cream and fall slowly from a lifted spoon.

Transfer to a piping bag fitted with a ¼-inch plain round tip. Pipe 3-inch thin lines onto parchment-lined baking sheets, spacing them 2 inches apart — they will spread considerably.

Bake for 10–12 minutes until the edges are golden brown and the centers remain pale. Cool completely on the pan — they firm as they cool into the characteristic thin, crispy wafers. Serve with crème brûlée, ice cream, or alongside coffee.
