- 12 lbs whole carrots or large carrots, peeled and halved lengthwise
- 23 tablespoons unsalted butter, melted
- 32 tablespoons honey
- 41 tablespoon fresh orange juice
- 51 teaspoon orange zest
- 6½ teaspoon cinnamon
- 7¼ teaspoon cumin
- 8½ teaspoon salt
- 9¼ teaspoon black pepper
- 10Fresh thyme and flaky sea salt for serving

Preheat oven to 425°F. Line a large rimmed baking sheet with foil. Whisk melted butter, honey, orange juice, orange zest, cinnamon, cumin, salt, and pepper in a large bowl.

Add carrots and toss until each piece is evenly coated in the honey butter glaze. Spread in a single layer on the prepared baking sheet, cut-side down for better caramelization. Do not crowd or they will steam.

Roast at 425°F for 20 minutes without stirring so the cut sides develop a deep caramelized crust. Toss and roast 8–10 more minutes until the carrots are completely tender when pierced with a knife and the glaze has reduced into a sticky, golden coating. Transfer to a platter, scatter fresh thyme leaves, and finish with a pinch of flaky sea salt.
