- 24 cubes sharp cheddar cheese (1-inch cubes)
- 32 tablespoons Worcestershire sauce
- 41 teaspoon garlic powder
- 51 teaspoon onion powder
- 61 teaspoon smoked paprika
- 7½ teaspoon salt
- 8¼ teaspoon black pepper
- 91 tablespoon olive oil
- 104 brioche buns, toasted
- 11Lettuce, tomato, pickles, mayo, and mustard for serving

Mix ground turkey with Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper — work gently with hands; overworked turkey burgers become dense. Divide into 8 thin, equal patties. Place a cube of cheddar in the center of 4 patties; top each with a second patty and press the edges firmly to seal, ensuring the cheese is completely enclosed.

Heat olive oil in a cast-iron skillet or grill pan over medium-high heat. Cook turkey patties 5–6 minutes on the first side without moving until a crust forms. Flip once and cook 4–5 more minutes until an instant-read thermometer reads 165°F throughout. Do not press the patties — this squeezes out the juices.

Rest 2 minutes before placing on toasted buns. The cheddar inside will have melted into a gooey surprise. Top with lettuce, tomato, pickles, mayo, and mustard.
