- 12½ cups old-fashioned rolled oats
- 21 cup walnuts, roughly chopped
- 3½ cup pepitas
- 4½ cup dried cranberries
- 5½ cup honey
- 6⅓ cup peanut butter or almond butter
- 72 tablespoons coconut oil
- 81 teaspoon pure vanilla extract
- 9½ teaspoon cinnamon
- 10½ teaspoon fine salt
- 11½ cup mini chocolate chips

Preheat oven to 350°F. Spread oats, walnuts, and pepitas on a rimmed baking sheet. Toast 8–10 minutes, stirring once, until fragrant and lightly golden. Cool slightly. Line an 8×8-inch pan with parchment paper, leaving an overhang.

Combine honey, peanut butter, and coconut oil in a small saucepan over medium heat. Stir and heat until the mixture bubbles gently and is fully combined, about 2–3 minutes. Remove from heat and stir in vanilla, cinnamon, and salt.

Pour the warm honey mixture over the toasted oat mixture. Add dried cranberries and stir until everything is thoroughly coated and sticky. Let cool 5 minutes, then fold in chocolate chips. Press the mixture very firmly into the lined pan — use the bottom of a measuring cup to compact it as densely as possible. Refrigerate at least 2 hours until completely set and solid before cutting into 12 bars. Store refrigerated up to 2 weeks.
