- 12 large sweet onions, sliced into ½-inch rings
- 21 cup all-purpose flour, divided

Separate onion slices into individual rings. Set up a dredging station: ½ cup plain flour in one bowl; buttermilk and egg whisked together in a second; panko mixed with remaining ½ cup flour, paprika, garlic powder, cayenne, salt, and pepper in a third.

Working with one ring at a time, dredge in plain flour (shake off excess), dip in buttermilk (let excess drip), then press firmly into the panko mixture, coating all sides. Place on a wire rack. For extra crunch, refrigerate the coated rings 15 minutes before frying.

Heat 2 inches of vegetable oil in a heavy pot to 375°F. Fry rings in batches of 4–5 for 2–3 minutes per side, turning once, until deep golden brown and the breading is perfectly crispy. Drain on a wire rack (not paper towels) and season immediately with salt. Mix dipping sauce ingredients and serve alongside.
